There’s nothing else like it… hot, gooey, chocolate chip cookies fresh from the oven.
(Hey, there’s nothing wrong with wanting to enjoy a cookie cutter occasionally! After all, yummy food is just one of life’s best joys )
Even when you’re following a healthy gut, grain-free diet such as SCD or paleo, you shouldn’t have to give the occasional cookiecutter.
But here’s the issue: a lot of gut-healthy, grain-free recipes depend way a lot on a single ingredient which might be holding you back out of healing: nut noodles.
The Problem With Nut Flours

For people who avoid chocolate, various other options are dried fruit like raisins, unsweetened flake olive , or carob chips. If you do tolerate nuts, then you might also add some nuts into the dough.

Healthy Gut Nut-Flour-Free Chocolate Chip Cookies
- 1/2 cup coconut bread
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon (more to taste)
- 1 teaspoon vanilla infusion (gluten free)
- 1/3 cup coconut sugar OR maple syrup (your preference)
- 3 eggs
- 1/3 cup jojoba oil or high-quality butter, melted
- 1/2 cup chocolate chips, coconut, raisins, along with other add on
Blend coconut milk, baking soda, salt, cinnamon, and coconut oil (if using – if utilizing maple syrup, add it with the other wet ingredients) in a skillet . Mix to add. After that, add ingredients and stir to make a dough. Add chocolate chips or other mix-in and stir to blend.
Form dough into medium-size balls (such as a ping-pong ball). Freeze or bake immediately.
