  • 1/2 cup coconut flour
  • 1 cup tapioca flour
  • 1/2 tsp baking powder (or see note above)
  • 1/2 tsp sea salt
  • 4 eggs (or 4 gelatin eggs)
  • 1/3 cup jojoba oil or sweet butter, melted
  • 1/3 cup honey or maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 cup full-fat coconut milk (canned)
  • 1 cup fresh or frozen blueberries


  1. Prepare 12-cup muffin tin by greasing each cup or utilizing muffin tin liners.
  2. Combine all dry ingredients in a medium size mixing bowl. Whisk to blend.
  3. Add wet ingredients (except blueberries) and whisk until batter is smooth. If batter is too thick to stir smooth, slim with more almond milk, 1 tablespoon at a time.
  4. Divide batter evenly into prepared 12-cup muffin tin. Divide 1 cup frozen or fresh blueberries on top of batter. Use a small spoon to gently stir blueberries into batter.
  5. Bake at 350°F for 25-30 minutes, until edges are golden and a toothpick inserted in center of muffin comes out clean. Let cool before serving for best texture.

On May 2, 2009, I married David. The lake has been our back fall and the hills surrounded us. As I walked the road to the service site, arm and arm with my dad, I recall locking eyes with David for the very first time. I could still sense the wave of certainty and pleasure that hurried me. That was so right. 
Unfortunately for me, any tide of extreme emotion brings me to tears and that I wasn’unable to acquire through our vows with no voice shaking and cracking numerous occasions and I tried to prevent tears from destroying my makeup. And can I just say I’m not a cute crier?
Ever since then, we’ve sold our city home and moved into the suburbs. We ve increased our loved ones. We started homeschooling. We’ve traveled into some really beautiful areas. 
My marriage is unique. So take this advice and do what you will with it. God willing, we’ll have many, many years of learning before us. However, for the time being, all these are 10 truths I’t heard about union through these previous 10 years and truths which I completely stand by.

  1. Mix together grated avocado, cilantro, red onion, sun dried tomatoes, lime juice, pepper, salt, chili powder and garlic powder in a bowl.

  2. Divide mixture into four sections. Insert 1/4 of the avocado egg roll mixture into the center of four egg roll wrappers, placing the wrapper at a triangular place, so 1 point is facing in the base.

If all else fails, soaking any dehydrated beans from plain water overnight is better than not soaking at all – however you can personalize the soak to reap the most benefits.

Here’s how I boil my beans:

  • Working with a 4:1 ratio of beans into warm water, I put them for 10-24 hours in warm water with an acid or a base inserted – or nothing additional at all (it all depends on the type of bean)
  • For acids, so I personally use either lemon juice or vinegar, and add 2 tablespoons for each 1 cup of legumes
  • In my base, I add 1 pinch of baking soda per 1 cup of legumes
  • After soaking, I wash and rinse the beans then cook them in accordance with my own recipe

  • 1/2 cup applesauce
  • 1/4 cup boiled coconut oil
  • 1 teaspoon vanilla
  • 1/2 cup whole wheat pastry flour
  • 1 cup all purpose flour
  • 1 teaspoon cinnamon
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/2 teaspoon salt
  • 1/2 c chopped walnuts (optional)


  1. Preheat oven to 350 degrees F. Line an 8 1/2″ x 4 1/2″ loaf pan with parchment paper and put aside.
  2. In a big bowl, combine ground water and flax. Set aside for 5 minutes to thicken as you collect your remaining ingredients.
  3. To the flax mixture, after refrigerated, add the coconut sugar and maple syrup. Stir to combine.
  4. Insert the zucchini, applesauce, coconut oil, and vanilla, stirring until just blend. Careful not to over mix. Add this to the wet ingredients and stir until just combined.
  5. Pour batter into prepared pan and place in toaster. Bake for 30-37 minutes or until toothpick comes out clean. Let it cook on a wire rack for 45 minutes before removing from the pan. Cool completely before slicing.
